Spanish Tortilla is more or less a Frittata but unique as it is mostly just eggs and potato - if you have ever been to Spain you would have seen it served for breakfast everywhere!
Ingredients:
Extra-virgin olive oil
1 small red onion, thinly sliced
Crushed garlic (optional)
1-1.5 cups precooked potatoes roughly chopped or quartered
1/2 teaspoon smoked paprika
6 large eggs
splash of almond milk or soy milk
Salt & Pepper
Parsley to serve
Method:
Saute red onion slices with olive oil then set aside to cool. Whisk together eggs & milk and then stir in chopped potato and onion slices and garlic if using. Add some olive oil to a deep fry pan and then pour in egg mix, sprinkle on smoked paprika, cook bottom then finish in the oven or under the grill.
