Coconut Bark with Goji berries

CRAVING SOMETHING SWEET?

This is a great treat which contains only a few ingredients - the most important being coconut butter. If you haven't tried coconut butter then you simply must!

So what is coconut butter? Is it different from coconut oil? Yes, coconut oil is the oil extracted from the coconut while butter is made from the meat of the coconut. Coconut butter is rich in Lauric acid which is know to boost immunity and has anti-bacterial and anti-viral activity. It also boosts your metabolism which helps with weight loss and increased energy. Coconut butter contains high levels of magnesium, calcium and many essential Amino acids. The high level of healthy fats means you feel full longer so it is a perfect sweet treat for weight loss.

Ingredients:

Jar of Organic Coconut Butter

Handful of Goji berries

Handful of blackcurrants

Handful of organic macadamia nuts

1/4 cup of raw honey (optional)

Method:

Gently warm a jar of coconut butter in a bowl of boiled water, stirring occasionally until you have a consistency close to melted chocolate, it may take 15mins and possibly change the water to keep it hot and slowly melting.

Once you have the right consistency add to a bowl and mix in all other ingredients. Place in a baking paper lined slice tray and smooth. Set in the fridge for a few hours and then remove from the tray and cut into bark shapes. Will store in the fridge for weeks.

If you find it difficult to melt the coconut butter then you can shape a putty-like consistency into balls as shown below.
