Immune Boosting Miso & Chicken Broth Soup

A tasty soup with chicken broth, vegetables, mushrooms, ginger, garlic, chili, lime, coriander, sauerkraut and tamari sunflower seeds to keep your Immunity strong in winter.


  • Jar of chicken broth & Water to dilute

  • Mixed vegetables (carrot, beans, kale, red capsicum, snow peas, broccoli)

  • Cooked Chicken (optional)

  • Asian mushrooms

  • Sprinkle of Dulse flakes or chopped up seaweed

  • 1-2 T miso paste

  • Freshly crushed garlic & chopped ginger

  • Splash of Tamari & toasted sesame seed oil



Freshly chopped coriander

Lemon or Lime Juice

Tamari dry roasted sunflower seeds

Sauerkraut & Chili Flakes



To a saucepan, add chicken broth and water to dilute (depending on strength of broth and desired taste) then bring to boil then lower heat to a simmer. Add mixed vegetables including garlic and ginger and cook for 5-15mins depending on whether you like soft or crunchy vegetables. Add cooked chicken if using, splash of tamari, sprinkle of seaweed and toasted sesame seed oil and heat through. Using a mug, scoop out half a cup of broth and mix Miso paste through until well blended. Take the soup off the heat and incorporate the mixed miso back into the soup. It is recommended not to heat Miso as you destroy some of the beneficial bacteria. Garnish as desired.
